10 Minute Lo Mein

I’ve always hated the stereotype that all college students eat is ramen. I’ve never liked
the flavor packs in the cheap packages of ramen, but when I moved into my apartment it
seemed like the logical thing to buy. Instead of making soup with the ramen noodles, I opt to
make this 10 minute lo mein. This is a super easy recipe that can be vegetarian, like I made it
here, or you can add in the protein of your choice.

Ingredients:

  • -1 packet of ramen noodles
  • -a large spoonful of peanut butter
  • -4 tbsp of soy sauce
  • -1 packet of frozen veggies (can be a stir fry mix, but use whatever veggies you like)
  • -red pepper flakes, garlic powder, onion powder, pepper

Recipe:

  1. Start a small pot of boiling water.
  2. In a large pan on medium high heat, add frozen veggies to thaw.
  3. Once veggies are heated through, add a large spoonful of peanut butter to the pan. Stir
    until peanut butter melts into a sauce consistency.
  4. Add ramen noodles into the boiling water. Do not add the seasoning packet.
  5. Add about 4 tbsp of soy sauce to the pan with the veggies and stir.
  6. Sprinkle in red pepper flakes, garlic powder, onion powder, and pepper to the pan with
    veggies.
  7. After 3 minutes, the noodles should be cooked through. Strain the noodles and add into
    the pan with veggies.
  8. Stir in the noodles with the veggies and sauce mixture making sure the noodles get
    coated in the sauce.
