From the Kitchen: Easy, Tasty Salmon

I hate going to the store, so I try to make sure my freezer and pantry are prepared for weeks without grocery trips.  I always keep a big bag of frozen salmon filets in my freezer, so one of the meals I make when I’m out of my normal weeknight staples is this easy salmon recipe. Whether I eat it with rice, pasta, or some veggies, it’s a great meal to make quickly and easily. 

Ingredients: 

  • 1 filet of Salmon (I use frozen salmon from Aldi because it is cheap and a freezer staple in my apartment) 

  • neutral oil (Grapeseed oil, avocado oil, olive oil, etc) 
  • lemon pepper seasoning 
  • garlic powder 
  • paprika 
  • pepper 

Items needed: 

  • baking sheet 
  • tin foil (optional if you’re lazy like me and don’t want to deep clean your baking sheet) 
  • oven 

Recipe:

  1. Preheat oven to 400
  2. If using frozen salmon, thaw salmon by placing it in a container with cold water until it is not frozen. 
  3. Place salmon on a baking sheet covered in foil and pat salmon dry with a paper towel. It will still be moist, but this gets rid of excess water. 
  4. Drizzle oil over salmon on both sides so it is completely coated. 
  5. Add the seasonings over both sides of the salmon filet. The salmon should be visibly coated in the seasoning. 
  6. Rub in the seasonings to all sides of the filet and add to the oven for 8-10 minutes. 
  7. After 8-10 minutes, take it out and check if it’s cooked. To see if it’s cooked, take a fork and try to flake apart the filet. If it flakes easily then it’s done.
    • Depending on the size and thickness of the filet, it might take more or less time. 
  8. Once cooked completely, serve with veggies, pasta, or even on salads!

There’s a lot I love about this recipe. It’s cheap because I get a big pack of frozen salmon from Aldi, and I normally have the seasonings on hand. It’s super easy, comes together quickly, and it can be served with a variety of sides or in addition to other foods.
